Kachkolar Khosa Bata is a simple yet delightful Bengali dish that makes use of raw banana peels. This recipe transforms banana peels into a tasty side that pairs perfectly with rice and dal.
4 raw banana peels 1 teaspoon mustard oil 1 teaspoon nigella seeds 4 finely chopped garlic cloves 1 green chilly 2 red chillies Salt to taste
Begin by boiling the raw banana peels in a pan until they become tender.
Once boiled finely chop them using a knife.
In a wok, heat the mustard oil until it starts to smoke, then add the red chillies.
As the red chillies release a smoky aroma, add the nigella seeds and stir briefly.
Turn off the heat, and mix this aromatic mixture with the banana peels, along with the mustard oil.
Add chopped green chillies and mash the banana peels with your fingers until well combined. Season with salt to taste.
