This Niramish or pure vegetarian Khichdi from Bengal is served as an offering to the gods during festivals like Kali Puja and Durga Puja. Here is the easy and authentic recipe you need to make this Bhuni Khichuri at home.

1 cup gobindobhog rice ½ cup sona moong dal 1 potato, chopped ½ cauliflower, chopped ¼ cup green peas 2 tbsp cashew nuts 2 tbsp raisins 3 tbsp ghee 1 bay leaf ½ tsp panch phoron

3 green chillies, slit ½ tsp ginger paste 1 tsp turmeric powder 1 tsp cumin powder 1 tsp Bengali garam masala 1 tbsp sugar Salt to taste 3 cups water

Heat 1 tbsp ghee in a wok then roast the cashews, raisins, moong dal and rice one by one.

Now add the remaining ghee. Once it’s hot, add bay leaf, panch phoron, green chillies and ginger paste.
Saute these, then add the potatoes, cauliflower and peas along with the powdered spices and salt.
Cook until the veggies and spices are well combined, then add the rice and dal. Saute again.
Now add in the cashews, raisins, water and adjust the salt. Cover and cook until the Bhuni Khichudi is ready.
Serve it hot to the gods with Beguni, Bhaja and Chutney.
