In Bengal, it is tradition to offer mutton cooked without onion and garlic to Goddess Kali on Kali Puja. If you want to explore these flavours of Bengal, here is the recipe for Niramish Mangsho or mutton to try.
500g mutton 1 tbsp mustard oil 1 tbsp ghee 1 bay leaf 2 dry red chillies 5 cloves 1 cinnamon stick 2 green cardamom 1 black cardamom

4 tbsp ginger paste 1 tbsp turmeric 1 tbsp cumin powder 2-3 green chillies Salt, to taste 1 cup plain yoghurt 1 cup water 1 tsp sugar

Heat the mustard oil in a large wok. Once it starts smoking, add ghee and the whole spices.

Once these stop spluttering, add the mutton pieces, ginger paste and saute for 10 minutes.

Once the raw smell of ginger dissipates, add the powdered spices, green chillies and salt.

Saute for another 10-20 minutes until the meat browns up properly.
Then add yoghurt, water, adjust the salt and cook until the meat is ready. Add sugar and simmer for 5 minutes.
