Kakdicha Khorda: Ever Tried This Kheerey Ki Sabzi From Maharashtra?

Traditional Kakdicha khorda is a delightful and aromatic meal from Maharashtra that combines cucumbers with spices and herbs. Any dish can be enhanced with its zesty addition when served as an accompaniment or as it is.

Ingredients 

2 Cucumbers 1-2 tsp Oil 1 tsp mustard seeds ¼ tsp hing 1 finely chopped green chilli ¼ tsp haldi ½ tsp red chilli powder 1 tbsp besan Water as required Fresh coriander for garnish 

Step 1 

To begin, peel and grate two cucumbers. Squeeze out the water & set aside.  

Step 2

Heat 1–2 teaspoons of oil in a hot pan. Add 1 teaspoon of mustard seeds and 1/4 teaspoon of hing, and stir to combine. Add one finely chopped green chilli at this point. After it has cooked for a while, stir in 1/4 teaspoon of haldi and 1/2 teaspoon of red chilli powder, or more to taste. 

Step 3 

Finally, stir in the grated cucumber. Stir this well. Season with salt to your liking. Allow it to cook for a minute or two. 

Step 4

Now combine 1 tablespoon of besan with 1/2 tablespoon of water and stir it into this. Stir this thoroughly. Cook, covered, for 2 minutes after adding the coriander. Enjoy with a side of rice or roti!
