Kakdi Koshimbir: A Spicy Maharashtrian Salad To Pair With Your Meals

This is a refreshing, flavourful and light salad which is made with cucumber, grated coconut, mustard seeds and roasted peanuts. Here is an easy recipe to make kakdi koshimbir at home:

Ingredients

3 cucumbers (peeled and chopped), 1/2 cup peanuts (roasted and powdered), 1/3 cup scraped coconut, 2 green chillies, 1 tablespoon lemon juice, 1 teaspoon sugar, salt, ½ cup fresh coriander leaves chopped, for tempering: 1 tablespoon ghee, 1/2 teaspoon mustard seeds, 1/4 teaspoon cumin seeds

Step 1

Mix cucumbers with peanut powder, coconut, green chillies, lemon juice and sugar. Heat ghee in a non-stick pan.

Step 2

Add mustard seeds and as they begin to splutter add cumin seeds. Stir briefly.

Step 3

Add this tempering to the cucumber mixture along with salt and mix well. Serve immediately, garnished with coriander leaves.
