Whether it’s kacha aam (raw mango) or a juicy ripe mango, summer is all about enjoying the fruit in different ways. To make a meal with raw mangoes, here is a step-wise recipe for kache aam ki sabzi.
1 raw mango 1/2 cup jaggery 1 tablespoon oil 1/2 teaspoon mustard seeds 1/4 teaspoon cumin seeds 1 pinch asafoetida 1/2 teaspoon turmeric powder 1 teaspoon red chilli powder 1/2 teaspoon coriander powder Salt to taste 1 cup water Coriander leaves for garnish
Peel and finely grate the raw mango.
Heat some oil and let mustard seeds and cumin seeds splutter.
Add hing, turmeric powder, red chilli powder, and coriander powder. Mix well.
Mix in grated mango and cook for 2-3 minutes. Add jaggery, salt, and water.
Let the sabzi simmer till the mango softens. Garnish with coriander and serve.
