Diabetic-friendly and also ideal for children who are fussy, this millet-based breakfast recipe is a delicious healthy option for days when you need a quick solution.
1 cup jowar flour ¼ cup rice flour 1 onion, chopped 1 small carrot, chopped 1 teaspoon red chilli powder 1 teaspoon coriander powder 1 teaspoon turmeric powder 1 teaspoon cumin powder 1.5 cups buttermilk ½ cup water Juice of ½ lemon 3 tablespoons chopped coriander Salt, to taste Oil, for drizzling
Combine all the dry ingredients and spices in a large mixing bowl.
Pour the buttermilk and whisk to make a smooth batter, before adding the water to diute the consistency.
Season with salt and lemon juice; add the chopped veggies and herbs.
Heat a pan and ladle the batter on the surface before drizzling some oil on and around the crepe.
Cook on both sides for 2-3 minutes each and serve hot with green chutney.
