Also known as white gourd, ash gourd is a remarkable fruit loaded with essential nutrients and minerals. This melon boasts a wealth of carbohydrates, fiber, calcium, iron, zinc, protein, and vitamins B1, B2, B3, B6, C, among others. Check out the dishes that can be prepared with ash gourd.
You can make the juice by peeling, deseeding and blending ash gourd. To add flavours you can add some lemon juice, a pinch of salt, and black pepper.
Thoran is a quick and flavorful recipe that involves onions, melon and grated coconut. To add flavour, you can temper with cumin seeds and curry leaves. Serve with grated coconut.

You must have raita which is commonly made with onions and cucumbers. This raita is made of ash gourd, along with grated coconut, green chillies, cumin seed and yogurt. Temper with mustard, urad dal, curry leaves, and hing in a tablespoon of oil.
This is one of the uncommon halwa made of ash gourd. The process is somewhat similar. You can use jaggery instead of sugar.
