Upma is a popular South Indian breakfast option that is not just nutritious but delicious as well. To make it healthier, you can use jowar as it boasts a high protein and fibre content.
¾ cup jowar rava 1 onion ¾ cup mixed vegetables 1 cup water 1 teaspoon urad dal ½ teaspoon cumin seeds ½ teaspoon mustard seeds 1 pinch hing 2 green chillies Salt to taste Oil for cooking ¼ cup fresh grated coconut Lemon juice for garnishing Coriander leaves for garnishing
Wash jowar, add it to a pressure cooker with a cup of water, and cook for two whistles.
Heat oil and add cumin seeds and mustard seeds. Then, add urad dal and fry till golden brown.
Saute chopped onions, green chillies, and chopped veggies and cook until soft.
Season with hing and salt. Add cooked jowar and mix well.
Stir in grated coconut and lemon juice. Garnish with chopped coriander leaves, and enjoy.
