Mirchi Bada is a popular street snack from the city of Jodhpur in Rajasthan, India. It consists of large green chillies stuffed with a spicy potato filling, coated in a gram flour batter, and deep-fried. It pairs perfectly with chai on a rainy evening.
6-8 large green chillies 2 potatoes 1 tbsp oil 1 tsp cumin seeds 1 tsp mustard seeds 1 tsp turmeric powder 1 1/2 tsp red chilli powder
1 tsp garam masala 1 tsp chaat masala 2 tbsp chopped fresh coriander leaves 1 cup gram flour (besan) 1/4 cup rice flour (for extra crispiness) 1/2 tsp baking powder 1/2 tsp ajwain (carom seeds) Salt
Slit the green chillies lengthwise, removing the seeds. Heat oil in a pan and add cumin seeds and mustard seeds. Let them splutter.
Add turmeric powder, red chilli powder, garam masala, and chaat masala. Add the mashed potatoes, chopped coriander leaves and salt.
Cook for another minute. Remove from heat and let it cool. Carefully stuff each chilli with the potato mixture.
In a bowl, mix gram flour, rice flour, baking powder, red chilli powder, turmeric powder, ajwain, and salt.
Gradually add water and mix to form a smooth, thick batter. Heat oil in a deep frying pan and fry the badas.
