Try this Jharkhand's authentic and traditional way of preserving preservative delicious young bamboo shoots. Bamboo shoot achar will surely blow your mind with its taste and crunchiness.
1 kg bamboo shoots 1 cup mustard oil 1/2 cup vinegar 1/4 cup jaggery or sugar 1 tablespoon cumin seeds 1 tablespoon coriander powder 1/2 teaspoon red chilli powder 1/4 teaspoon turmeric powder Salt to taste
Add boiled bamboo shoots with some mustard oil, cumin seeds, coriander powder, red chilli powder, and turmeric powder.
Cook for a few minutes; add jaggery and vinegar.
Let it cool completely before storing it in an airtight container.
