Jhangora ki Kheer is a popular dessert from Uttarakhand, known for its texture and earthy flavour. Made with Jhangora (barnyard millet), this kheer is creamy, healthy and perfect for festivals or as a comfort dessert. Here is how to make it at home.
½ cup Jhangora 4 cups milk ½ cup sugar 2 tsp ghee ¼ tsp cardamom powder 2 tsp chopped nuts (almonds, cashews, optional) 1 tsp raisins
Rinse the millet thoroughly and soak it in water for 30 minutes. Drain before cooking.
In a pan, heat ghee and add the soaked millet, roast for 2-3 minutes until aromatic.
Pour in the milk and cook on low heat, stirring occasionally, until the millet becomes soft and the mixture thickens.
Stir in the sugar, cardamom powder, chopped nuts, and raisins. Cook for another 5 minutes.
Jhangora ki Kheer can be served warm or chilled, garnished with more nuts if desired.
