1 cup quinoa 2 cups vegetable stock 1/2 cup olive oil 2 tsp lemon juice Salt and pepper as per taste 1 cup boiled chickpea 1 chopped cucumber 1 cup feta cheese 1 onion, finely chopped 1/2 cup chopped parsley 1/2 cup roasted pistachios
Cook the quinoa in vegetable stock and cook for 15 minutes. Keep it aside.
Add the olive oil, lemon juice, salt and pepper and create the dressing.
In a large mixing bowl, add the salad ingredients and mix the cooked quinoa.
Pour the dressing onto the salad and toss it. Chill in the fridge and serve.
