The Japanese souffle pancakes are known for their fluffy and airy texture compared to the traditional American pancakes. These cakes are perfect for breakfast or as an evening snack with a cup of tea or coffee. Here's a recipe for you to try:
2 eggs, separated 2 tbsp milk 1/4 tsp vanilla extract 1/4 cup flour 1/2 tsp baking powder 1/4 cup sugar Pinch of salt Butter for greasing Powdered sugar and syrup for serving
Whisk yolks with milk and vanilla. Sift in flour and baking powder; mix until smooth.
Beat whites with salt until frothy, gradually add sugar, and beat until stiff peaks form. Fold whites into the yolk mixture in three parts.
Heat a greased pan on low, scoop batter to form pancakes, cover, and cook for 4-5 minutes per side.
Serve with powdered sugar and syrup along with a cup of tea or coffee for the best experience.
