Sooji Halwa is a classic dish that graces Indian festivals like Janmashtami. This recipe offers a delightful blend of sweet, rich flavours with a caramel-like glaze, perfect for celebrating the festive spirit.
1 cup sooji (semolina) 1 1/2 tbsp besan (gram flour) 1/2 cup plus 1 tbsp ghee (clarified butter) 3/4 cup sugar 3 cups water
In a pan, roast the sooji and besan together over low flame, stirring continuously for 5-6 minutes.
Add the ghee and continue cooking on low flame until the mixture turns light chocolate brown and fragrant.
Add the sugar and mix thoroughly, ensuring it blends well with the sooji-besan mixture.
Slowly pour in the water while stirring continuously. Increase the flame slightly.
Keep stirring until the halwa thickens and ghee starts to separate from the mixture. Garnish with slivered pistachios or almonds before serving warm.
