This popular fasting snack is made with foxnuts (puffed lotus seeds) and can be served hot or cold. It makes for a tasty, nutritious bowl n Janmashtami.

1 litre of whole cream milk ⅓ cup of jaggery powder or sugar 1 tablespoon of ghee 50 grams of puffed lotus seeds (Makhana) ¼ teaspoon of nutmeg powder 1/4 teaspoon of cardamom powder 8-10 strands of saffron

Heat a thick-bottomed pan and add 1 tablespoon of ghee. Roast the makhana until they turn lightly golden.

Pour in the 1-litre whole cream milk and let it simmer. Keep reducing the milk until it reaches a smooth and creamy consistency.

Add ⅓ cup of jaggery powder or sugar to the reduced milk and mix it thoroughly until the sweetener is well incorporated.

In a small bowl, soak 8-10 strands of saffron in ½ teaspoon of milk for a few minutes.

Once soaked, add the saffron mixture along with ¼ teaspoon each of nutmeg and cardamom powder to the kheer. Stir well to combine.

You can enjoy it either hot or chilled. For a finishing touch, garnish with finely chopped nuts.
