A sweet treat from Mangalore, Karnataka, called jamunde, which is made with a recipe that has been lost, takes you back to the heart of custom and heritage. This tasty treat not only pleases the taste buds, but it also keeps the region's rich culinary history alive.

250 g jaggery 1 cup water ¼ cup coconut pieces ½ tsp cardamom powder ½ tsp baking soda 2 tsp sugar ½ tsp salt 50 g maida 500 g Wheat flour 2 cups Water 2 tsp coconut oil

Cook jaggery in 1 cup water until melted. Let it cool completely. Transfer the jaggery mixture to a big bowl. Add ½ tsp cardamom powder, ½ tsp baking soda, 2 tsp sugar, and ½ tsp salt. Mix well until sugar dissolves.
In a separate bowl, mix 50g maida, 500g wheat flour, and 2 cups water. Knead with your hands for 8-10 minutes for fermentation. Add 2 tsp coconut oil to the batter, spread it on top, and let it ferment for 3-4 hours.
Heat coconut oil for frying. Take a portion of the batter, drop it into the medium-hot oil, and fry over medium-low heat for 5-7 minutes or until golden brown. Enjoy these golden delights with a cup of tea or coffee, savoring the taste of Mangalorean tradition.
