Italian-Style Chopped Salad: A Quick And Easy Lunch Option

Besides the delicious pasta and pizza that Italian cuisine is known for, the insalata – or salads – are one of the most important components of traditional Italian meals. The chopped salad – an Italian take on a medley of delicious veggies, cold cuts and cheese, is the perfect cold lunch to enjoy on a busy work day.

INGREDIENTS [FOR SALAD]

1 head iceberg lettuce, shredded ½ cup cherry tomatoes, halved ½ red onion, finely chopped 1 can chickpeas ½ cup red cabbage, sliced 7-8 pieces bocconcini 6 slices pepperoni 6 slices salami ¼ cup grated parmesan

INGREDIENTS [FOR DRESSING]

1 teaspoon dried oregano ¼ cup extra virgin olive oil Juice of 1 lemon 1 tablespoon balsamic vinegar 2 cloves garlic, minced Salt and pepper, to taste

STEP 1

Whisk together the ingredients for the dressing in a small bowl and set aside.

STEP 2

Combine the shredded lettuce, cherry tomatoes, onion, chickpeas and cabbage in a large bowl.

STEP 3

Finely chop the salami and pepperoni slices, and halve the bocconcini before tossing it with the vegetables.

Pour the dressing over the vegetable and meats mixture and mix thoroughly to combine.

Sprinkle a generous amount of grated parmesan on top and serve immediately.
