Irani Café-Style Kuku Sabzi, The Herbiest Eggs You’ll Ever Taste

This Persian-origin herbed omelette is loaded with dill, coriander, spring onions and more, and is very popular across Mumbai and Pune’s Irani-style cafes. Here’s how you can make this dish at home with ease.

Ingredients

6 eggs 1 cup dill leaves 1.5 cups coriander leaves ½ cup spring onions Salt, to taste 1 tsp black pepper ½ tsp cumin powder ½ tsp cinnamon powder 1 tsp baking powder 3 tbsp olive oil ½ cup walnuts, chopped 1/3 cup dried cranberries, chopped

Step 1

Place the coriander leaves, dill leaves, spring onions and half the olive oil in grinder and blitz it.

Step 2

Place the eggs, salt, pepper, cumin powder and cinnamon powder in a large bowl and whisk together.

Step 3

Now add the herbs, walnuts, cranberries and baking powder and mix well.

Step 4

Pour the batter in a round, greased baking tin and bake in the over at 180 degrees for 15-20 minutes.

Step 5

Once done, cut slices of the Kuku Sabzi and serve with toast and tea.
