An easy and delicious pasta recipe with a creamy tomato sauce spiked with vodka, this recipe makes for an inviting lunch for one or a supper to make for your family.

1 cup rigatoni/penne 1 small onion, finely chopped 5 cloves garlic, minced ¼ cup tomato paste 30 ml vodka 1 cup heavy cream 1 teaspoon dried oregano 1 tablespoon butter 1 teaspoon red chilli flakes Salt and pepper, to taste Fresh basil, torn

Heat the butter in a large skillet and bloom the chilli flakes before adding the garlic.

Cook until aromatic and add the chopped onion to sauté for 2-3 minutes, until translucent.

Add the tomato paste and cook until the oil separates, before pouring in the vodka.

Cook on a medium-high flame until the alcohol evaporates and add in the cream.

Stir well using a wooden spoon and break up any lumps of tomato paste, until you have a silky smooth sauce.

Season with dried oregano, salt and pepper before adding in the cooked pasta and coating thoroughly with the sauce.

Add a few tablespoons of pasta water to allow the sauce to turn thick and creamy.
