International Sushi Day will be celebrated on June 18th this year and although the traditional and most popular types of this delicacy often feature meat, there's still a place for vegetarian variants. Here's a recipe for you to try:
1 cup of sushi rice 1 1/4 cups of water 2 tablespoons of rice vinegar 1 tablespoon of sugar 1/2 teaspoon salt 4 sheets, Nori 1 julienned cucumber 1 sliced avocado 1 julienned carrot 1/2 cup julienned bell pepper Soy sauce, pickled ginger, and wasabi (optional)
Rinse rice. Cook with water. Mix vinegar, sugar, and salt. Fold it into rice and let it cool.
Lay Nori on a bamboo mat. Spread rice, leaving a 1-inch border. Add cucumber, avocado, carrot, and bell pepper.
Roll tightly. Seal the edge with water and cut it into bite-size roundels.
Serve with soy sauce, ginger, and wasabi.
