International Coffee Day: Make Soft Coffee Cake To Celebrate

International Coffee Day celebrates the coffee culture's popularity and the brew's many uses. If you are a coffee lover, why don’t you commemorate in style and make a soft coffee cake with creamy frosting?

Ingredients

1¾ cups all-purpose flour 1½ tsp baking powder ½ tsp baking soda ¾ cup granulated sugar ¾ cup brown sugar ¾ cup butter 2 eggs 1 cup brewed strong coffee ½ cup milk 1 tsp vanilla extract 1 tbsp instant coffee granules Pinch of salt For the Frosting: 1½ cups butter 3 cups powdered sugar 3 tbsp strong brewed coffee 1 tsp vanilla extract 1 tbsp instant coffee granules 

Step 1

Take a bowl and sift flour, baking powder, baking soda, and salt. Set aside.

Step 2

Cream butter and sugar. Add eggs and vanilla extract.

Step 3

Slowly add dry ingredients to the wet mixture. Mix till you get a smooth batter.

Step 4

Bake for 20-30 minutes at 175°C. Let the coffee cake cool.

Step 5

Prepare the frosting by beating butter and mixing sugar, coffee, and vanilla.

Step 6

Spread a generous layer of frosting on the cake and enjoy!
