Mango Thokku is a delicious South Indian-style grated mango pickle made using raw mangoes, oil, and spices. It's a great accompaniment for chapati, curd rice, idli, dosa, and paratha, made without preservatives and ready in minutes.
2 Unripe (Raw) Mangoes, medium-sized 1 tablespoon Red Chilli Powder ¼ teaspoon Turmeric ⅛ teaspoon Asafoetida Salt ½ teaspoon Fenugreek Seeds ½ teaspoon Jaggery, powdered 2 tablespoons Sesame Oil ½ teaspoon Mustard Seeds ⅛ teaspoon Asafoetida
Peel the mangoes and grate them using a grater.
Heat a pan with oil and temper with mustard seeds and asafoetida.
Add grated mango and fry for 4-5 minutes until soft.
Add red chilli powder, turmeric, salt, and oil, then mix well. Fry for 6-8 minutes on low flame, stirring every two minutes.
Roast and powder fenugreek seeds separately. Add jaggery and fenugreek powder, fry for two more minutes.
Cool down and transfer to an airtight container, refrigerate, and use within a month.
