Appam is a thin flatbread consumed across South India with curries. Its edges are crispy while the centre is soft. Using instant yeast, you can prepare it in a jiffy and serve a delicious meal in the morning. Follow this step-by-step guide.
3 cups water 1.5 cups of regular rice ½ tsp instant yeast ½ cup grated coconut ½ tsp salt 2 tbsp sugar ¼ cup poha
Grind overnight soaked rice with grated coconut and poha in the morning.
Add water to adjust the consistency. Season the blend with sugar and salt.
Add instant yeast and wait for the rise.
Pour a ladle of this batter into a wok or kadhai.
Spread the batter so the edges are thin and crispy.
Serve appams hot with kadala curry or avial.
