Have you tried the instant dosa recipe? Not all kinds of dosa batter need overnight soaking and hours of fermenting. A few recipes like rava dosa without rice flour are perfect for your instant cravings or when guests come unannounced.

1 cup sooji Salt to taste 2 tablespoons maida 4 cups water 1 grated carrot 1 finely chopped onion 2 tablespoons grated coconut 1 teaspoon cumin seeds Oil 2 finely chopped green chillies 1 tablespoon chopped cashews 2 tablespoons coriander leaves

Mix rava, maida, and salt to taste in water. It will be a smooth but a little runny concoction.

Add carrots, onions, curry leaves, cashews, grated coconut, chillies, and spices to the mix. If you want plain dosa, you can skip vegetables.

Let the mixture rest for 15-30 minutes. It will allow rava to soak in water and become soft.

Add more water to adjust consistency, but meanwhile, heat up a non-stick pan.

Spread the dosa batter using a ladle and surround the edges with oil.

Once the base has become crispy, serve the dosa with coconut or onion-tomato chutney.
