Made with the nutrition-packed millet, ragi dosas are an easy meal option for when you're running short on time. Balance health and taste by pairing these dosas with coconut chutney and sambar to make it filling.

1 cup ragi flour 1 cup rava ½ cup rice flour ½ cup yoghurt 1-inch piece ginger, minced 2 green chillies, chopped 3-4 curry leaves, torn 1 onion, chopped 1 teaspoon cumin seeds 3.5 cups water 1 teaspoon black pepper powder Salt, to taste Oil, for pan-frying

Combine the ragi flour, rava and rice flour in a bowl, followed by the ginger, chillies, cumin seeds and onions.

Use a spoon to mix well before adding the yoghurt and combining until the mixture is moist.

Add the water and stir constantly until any lumps have disappeared, to make a smooth batter.

Season with black pepper powder and salt and allow it to sit for 10 minutes while you heat a pan.

Using a ladle, pour the batter on to the hot pan and spread similarly as making a dosa.

Drizzle a few drops of oil on top and cook on a medium-high heat for 3 minutes before turning over.

Cook further for a minute and repeat until you have enough. Serve hot with chutney and sambar.
