Pickles are must-have for any Indian kitchen, but they can be a lenghty process to make. This simple quick pickle comes together in minutes and tastes amazing, so add it to your dinner today!

25 green chillies (adjust quantity as per preference) 1 tablespoon salt 1 tablespoon turmeric 3 tablespoons oil (a combination of half mustard oil and half canola oil) 1/2 cup cracked mustard seeds (also known as rai na kuria or rai dal) 1 lemon 1/2 teaspoon asafetida (hing)
Wash and dry green chillies. Slit them lengthwise, remove seeds if desired, and cut the stem.
Add salt and turmeric to the chillies, then set aside for an hour.
In a separate bowl, combine cracked mustard seeds, asafetida, and lemon pieces.
Heat a mixture of mustard and canola oil, then pour it over the ingredients in the bowl.
Cover the bowl and let it sit for 15 minutes. Transfer the pickle into a glass jar once it's cold.
