A crunchy, tangy delight made with fresh cucumbers and brine. It is quick and easy to prepare and is a perfect condiment for salads or sandwiches.
4 cucumbers, sliced 1 cup vinegar 1 cup water 2 tbsp salt 2 tbsp sugar Garlic, mustard seeds, chilli flakes, optional
Wash and slice the cucumbers in desired shapes.
Prepare brine by heating vinegar, water and salt until dissolved.
Add sliced cucumbers, garlic and desired spices to a jar, then pour in the brine.
Close the jar and refrigerate it for 24 hours. The flavour improves with time!
