Appam is a South Indian pancake, which is lightweight and easy to cook. It is often consumed for breakfast or snacks and served along with chutney, sambar, and other side dishes. If you don’t have time to prepare and ferment the batter, try this instant recipe.
¼ cup grated coconut 1 cup rice flour 1 teaspoon sugar Water as required ¼ cup cooked rice Salt to taste Baking soda
Add grated coconut, cooked rice, and water in a food processor. Blend the ingredients into a smooth paste.
Take out the mixture in a bowl and add baking soda, salt to taste, sugar, and rice flour to it.
Make sure that the consistency of the mixture is neither too thick nor runny. It can be similar to the dosa batter.
After resting the batter for 15-20 minutes, heat a pan, grease it, and spread the batter.
Cover the lid, and you will notice the edges coming off. As soon as the base turns brown, loosen the edges.
Serve hot appam with chutney of your choice along with a cup of filter coffee.
