Indulge in the Warmth of Rajasthani Kachi Haldi ki Sabzi this Winter

A traditional winter treat from Rajasthan, Kachi Haldi ki Sabzi is flavoured with a unique blend of raw turmeric and simple spices. Raw turmeric is a healthful and hearty addition to winter dishes due to its anti-inflammatory and immune-boosting characteristics, in addition to its vivid flavour.

Step 1 

Peel and thinly slice fresh raw turmeric, about 200 g.

Step 2

In a pan, heat 2 tablespoons of mustard oil and add 1 teaspoon each of cumin seeds and saunf, kalonji and fenugreek seeds.

Once the seeds splutter, add sliced turmeric, ½ teaspoon red chili powder, and salt to taste. Sauté for 5-7 minutes until turmeric is tender yet retains a slight crunch.

Garnish with fresh coriander and serve this Rajasthani specialty, Kachi Haldi ki Sabzi, as a flavourful and nutritious winter side dish.
