Fresh lychee puree, heavy cream, sugar and milk are used to make the cooling and creamy treat known as lychee ice cream. Its flavour is mild and fruity, making it ideal for summer.
1 cup fresh lychee puree 2 cups heavy cream 1 cup whole milk 1 cup granulated sugar 1 tsp vanilla extract
Start by removing the skin and seeds of the lychees and blend them to a fine puree.
Take a saucepan, combine the milk and sugar and heat over medium heat until the sugar dissolves.
Now let it cool down. In a large mixing bowl, whisk the heavy creamAdd the lychee puree, vanilla extract, and cooled milk-sugar mixture.
Combine all well. Now Pour the mixture into an ice cream maker and churn accordingly.
Transfer the churned ice cream to an airtight container and freeze until firm.
Serve the lychee ice cream in bowls or cones and garnish with lychee fruits or mint leaves.
