Elevate your dessert game with Margarita Boozy Cupcakes, Each cupcake is infused with a hint of tequila and lime. Perfectly balanced with a sweet and tangy frosting.
For the Cupcakes: 1 ½ cups all-purpose flour 1 ½ tsp baking powder ¼ tsp salt ½ cup unsalted butter 1 cup granulated sugar 2 large eggs Zest of 1 lime 2 tbsp fresh lime juice ¼ cup tequila ¼ cup milk For the Frosting: ½ cup unsalted butter 3 cups powdered sugar 2 tbsp fresh lime juice 2 tbsp tequila Lime wedges
Preheat oven to 175°C. Line a cupcake pan with paper liners. In a bowl, whisk the flour, baking powder, and salt.
In another bowl, mix butter and granulated sugar until fluffy. Beat in the eggs too.
Add lime zest, lime juice, tequila, and milk. Mix well. Gradually add the dry ingredient into the wet ingredients.
Divide the batter evenly among the cupcake liners. Bake in the preheated oven for about 18-20 minutes.
Now Prepare the frosting. In a bowl, beat the softened butter until creamy. Gradually add the powdered sugar, lime juice, and tequila.
Cool down the cupcakes and frost them generously with the tequila-lime frosting.
Garnish each cupcake with a small lime wedge. Refrigerate the cupcakes for at least 30 minutes. Set and serve!
