Parathas are one of the quintessential Indian breakfast foods and though varieties like aloo paratha and gobhi paratha are popular throughout the country, the Indori sev paratha isn't as well known as the others but is equally good. It is made with staple pantry ingredients and makes for a filling breakfast. Here's an easy recipe for you to try:
1 cup whole wheat flour 1/4 teaspoon salt Water Ghee or oil 1 cup Indori Sev 1 medium-sized finely chopped onion 1-2 finely chopped green chillies (optional) 2 tablespoons finely chopped coriander leaves
Combine whole wheat flour, salt, and water to make a smooth dough. Let it rest for 15-20 minutes.
Divide the dough into balls and roll each into a small circle. Spread ghee/oil on a circle, then add onions, green chillies, and coriander.
Sprinkle Indori Sev evenly on the circle. Fold it into a triangle.
Cook the folded triangle on a hot grill with ghee/oil until golden brown on both sides.
Serve the hot Indori Sev Paratha with yoghurt or chutney.
