INGREDIENTS

4 cups corn kernels, grated 2 tablespoons ghee 1 teaspoon mustard seeds 1 teaspoon cumin seeds 2 green chilies, chopped 1 teaspoon ginger, grated 1 teaspoon turmeric powder 1 teaspoon red chili powder 1 cup milk 1 tablespoon sugar Fresh coriander leaves, chopped Lemon wedges, for serving Salt, to taste

STEP 1

Heat the ghee in a pan and temper the mustard seeds, cumin seeds and green chillies.

STEP 2

Add the grated ginger and cook for a minute before adding the spices and letting them bloom.

STEP 3

Tip in the grated corn and continue to stir for 5-7 minutes, until it begins to soften.

STEP 4

Pour in the milk and allow the mixture to simmer for 8-10 minutes, thickening slightly.

STEP 5

Season the mixture with salt and sugar, while cooking for another couple of minutes.

STEP 6

Turn off the heat and sprinkle fresh coriander on top. Serve hot with a squeeze of lemon.
