Bhutte ka shorba, a flavourful Indian corn soup, is perfect for the monsoon season. This delicious soup is a comforting and nutritious treat during monsoon season. Here is how to make it at home
2 cups of corn 1 medium onion 1 medium tomato 1-inch piece of ginger 2 cloves garlic 1 green chilli 1 tsp cumin seeds ½ tsp turmeric powder ½ tsp of coriander powder 4 cups vegetable or chicken broth 2 tsp oil/ghee Salt according to taste Coriander leaves Lemon wedges
If using fresh corn, cut the kernels off the cob; if using frozen corn, raise them.
In a large pot, heat oil/ghee on medium heat. Then, add cumin seeds and let them splutter.
Add onion and saute; add grated ginger and minced green chilli, and saute for 1 minute.
Add tomatoes, turmeric and coriander powder. Cook until the tomatoes turn soft and the oil separates.
Add corn to the pot and cook for 2-3 minutes. Then, pour the vegetable/chicken broth.
Bring it to a boil, reduce the heat and cook for 15-20 minutes.
With a blender, mix everything to the desired consistency.
Serve hot with coriander leaves and lemon wedges.
