Made with full cream milk, saffron, pista, cream and green cardamom, this tricolour dessert is perfect to celebrate Independence Day.
1. 5 L milk, full cream 5 g green cardamom powder 75 g sugar 5 g saffron 2 tbsp basil leaves, fresh 1 tbsp almonds (blanched, skinned, slivered) 1 tbsp pista (slivered) 3 tbsp cream
Put the milk into a wide pan and bring to boil over high heat, stirring constantly. Now lower the heat and cook the milk until it is reduced to about 40%.

Now add nuts and cardamom seeds, stir well, divide into 3 parts. To one part add saffron strands, to other part add basil leaf puree and cream to the third part.

Let it Cool for some time. Pour the mixture into kulfi molds alternating and distributing evenly. Cover and freeze until set. Garnish with nuts and serve.
