Loaded with collagen, vitamins and anti-inflammatory properties, a homemade chicken soup is one of the most nutritious concoctions to relish during the change in season. Fight off common ailments like the flu or cold by making this a meal complete with some rice or noodles.
500 grams bone-in chicken pieces 2 carrots, peeled and diced 2 celery stalks, diced 1 onion, diced 5 cloves garlic, minced 1 tablespoon grated ginger 8 cups water 2 bay leaves 1 teaspoon dried thyme Salt and pepper, to taste Fresh parsley, for garnish ½ cup cooked rice/noodles
Heat the olive oil in a large pot and add the diced vegetables to sauté for 3-4 minutes.
Remove onto a plate and sear the chicken pieces until brown on all sides.
Toss in the cooked vegetables back into the pot, along with the remaining ingredients except the cooked noodles or rice.
Simmer the mixture over low heat for 1.5 hours, skimming the foam periodically to remove impurities.
Strain the mixture to filter the broth separately, while you shred the cooked chicken and add it back to the soup.
Pour the hot soup over cooked rice or noodles and enjoy for a light lunch or dinner.
