Also known as milagai podi, this is a dry condiment from South Indian cuisine that is popularly served with idlis, dosas and uttapam. Here is an easy recipe to make idli podi at home.

½ cup sesame seeds, 4 tbsp dried red chillies, ¼ cup split black gram skinless, 1/4 cup split Bengal gram, 2 tbsp mustard seeds, 3 cups whole dry red chillies, ¼ cup roasted chana dal, ¾ tsp asafoetida 1 tsp jaggery, ½ cup salt

Clean sesame seeds and broil them in a fry pan till they start popping. Remove and cool. Heat 2 tbsp oil and fry dals and mustard seeds, separately, to a golden brown. Remove and cool.

Remove stalks from red chillies and fry them in two tbsp of oil and cool.

Once all these ingredients have cooled down, grind them with chana dal asafoetida, jaggery and salt, to a coarse powder.

Cool and store in a dry airtight bottle. Mix this powder with sesame oil or ghee and serve with your favorite South-Indian dishes.
