Transforming humble leftover rice into a delight, this Gujarati Rotla recipe offers a crunchy and savoury twist to your meals. With a perfect blend of spices and textures, these rice flatbreads are a delightful treat.

2 cups leftover rice 1 cup atta ¼ cup chopped onions 2-3 green chillies, finely chopped ¼ cup chopped fresh coriander leaves 2 tablespoons curd ½ teaspoon red chilli powder ½ teaspoon chaat masala ¼ teaspoon garam masala Salt to taste Oil

In a mixing bowl, combine the leftover rice, whole wheat flour, chopped onions, green chillies, coriander leaves, curd, red chilli powder, chaat masala, garam masala, and salt.

Mix all the ingredients well, ensuring they are evenly incorporated then knead the mixture into a dough.

Take a small portion of the dough and roll it out evenly using a rolling pin to create a circular roti shape

Heat a tawa or griddle over low-medium flame. Place the rolled rotla on the heated tawa and cook until small bubbles appear on the surface.

Remove from the tawa and repeat the process for the remaining dough portions.
