Discover a simple, quick-to-make carrot curry packed with flavour. This mild, vegan-friendly dish uses only ten ingredients and pairs perfectly with rice or roti, bringing a delicious warmth to your table.
2 tbsp olive oil 1 yellow onion, finely chopped 3 large garlic cloves, finely chopped 3 tsp grated fresh ginger 2 tsp coriander 1 tsp turmeric 1 tsp smoked paprika 3/4 cup coconut milk 1/2 cup water 2 tbsp chopped cilantro 4 carrots, sliced Salt and pepper to taste
Heat oil in a large pan over medium heat. Add chopped onion and sauté for 5 minutes.
Add garlic and ginger, and cook for another 5 minutes. Stir in carrots, coriander, turmeric, and smoked paprika.
Pour in coconut milk and water, stirring to combine.
Cover and simmer for 8 minutes until carrots are tender.
Remove from heat, season with salt and pepper, and garnish with coriander.
