Sannata raita is a refreshing and flavourful, dahi dish from Uttar Pradesh. This traditional recipe is called Sannata because after consuming it, the stomach goes silent with the refreshing taste and feel of this raita. Here is how to make it:
2 cups of plain yoghurt (dahi) 1 green chilli chopped finely ½ red chilli powder ½ black salt 1 cup boondi 1 tsp mustard oil 1 tsp hing 1 tsp cumin seeds 1 clay lamp (Mitti ka diya) Coriander leaves
In a large bowl, whisk yoghurt until smooth.
Add chopped green chilli, red and salt, whisk and add water until smooth
Add boondi, whisk again and keep it aside
Take the clay lamp (Mitti ka diya) add the mustard oil to it, and heat it on a high flame
Once it is heated, add hing and cumin seed and let them crake.
Add the hot clay lamp to the bowl of raita and let it sit for a while
Garnish it with coriander leaves and serve.
