Yoghurt is a creamy and nutritious dairy product that has been cherished for centuries for its health benefits and versatility in the kitchen. Although store-brought yoghurt is convenient, making it at home allows you to customise flavours as per your preference. Here’s a simple recipe for making your own batch of yoghurt:
4 cups of milk (whole or 2% for creamier results) 2 tablespoons of plain yoghurt with live active cultures or leftover yoghurt from your last batch
Pour the milk into a saucepan and heat it over medium heat until it reaches just below boiling. Stir frequently to prevent scorching.
Remove the saucepan from the heat and let the milk cool until it’s warm. This temperature is ideal for activating yoghurt cultures.
In a small bowl, mix 2 tablespoons of plain yoghurt with a small amount of warm milk until smooth. Then pour the mixture into the saucepan with the rest of the milk and stir gently to combine.
Transfer the milk mixture into a clean glass container. Cover it with a lid or plastic wrap to maintain its warmth. Let it sit undisturbed in one place for 6–8 hours, or until it thickens to the desired consistency.
Once the yoghurt has set, refrigerate for at least 2 hours to chill and firm up further. Serve with your favourite toppings.
