Caramelized kheer is a fun twist spun on your regular vermicelli kheer. For all the sweet tooths out there, you need to try this delightful recipe to make kheer.
1 tbsp ghee or clarified butter 1 cup vermicelli 4 cups milk ½ cup sugar 1 tbsp cardamom powder 2 tbsp raisins 2 tbsp cashew
Grab a large cauldron and set the heat on low. Add 1 tbsp of ghee and vermicelli, then let it roast until it appears golden brown.
Pour 4 cups of milk into the mixture. Stir it well. Let it boil for about 7 minutes until the vermicelli is cooked to the tee.
You will need a pan to make caramelized sugar. Add ½ a cup of sugar and use a spatula to stir it on low heat.
While the kheer is still steaming hot, add caramelized sugar into it and stir thoroughly.
Stir for about 5 minutes until all the ingredients make a flavorful concoction. Simmer it for 2 more minutes for everything to cook completely. Set this aside.
Grab your pan to heat a tbsp of ghee. Add raisins and cashews as you like, and let the dry fruits roast.
Ensure that you don't overheat it; otherwise, the caramelised sugar will burn and disturb the essence of the kheer. Add condensed milk to your mixture for a smoother texture. It will make the kheer sweet and creamy without seeming thick.
