Traditionally, made using wheat, water, and eggs, pasta is one of the most comforting Italian dishes. Here’s how you can make a vegan pasta from scratch
Ingredients
100 gm flour
100 gm semolina/suji
½ tsp salt
¾ cup water
2 tsp olive oil
Turmeric (optional)
First mix the flour, semolina, and salt in a bowl. Create a well in it and pour water followed by olive oil. Mix well to combine.
Transfer to a working surface and knead to a smooth and soft dough for about 8-10 minutes.
Form a ball of the dough, wrap in a cling wrap and let it rest in the refrigerator for about 30 minutes.
Once refrigerated, take it out and place it on a floured surface and thinly roll it out using a rolling pin.
Dust with as much flour to prevent sticking, and loosely roll it up. Use a very sharp knife and cut the roll into strips.
Use your fingers to unroll the noodles and lay them loosely into several bundles to create noodle nests.
To cook, bring a large pot of salted water to a boil. Add pasta and cook until al dente for about 2-3 minutes.
Toss in your favourite sauce and veggies and enjoy.
