Panki is a beloved traditional Gujarati dish made with rice flour batter cooked between banana leaves. This light, flavourful snack is perfect for any occasion and easy to prepare with a few simple ingredients.
1 cup rice flour 1 cup yoghurt ½ cup water 1-2 green chilies, finely chopped 1 tsp cumin seeds Pinch of asafoetida Salt to taste Banana leaves, cut into squares Oil or ghee for greasing
Mix rice flour, yoghurt, water, green chilies, cumin, asafoetida, and salt into a smooth batter. Let the batter rest for 15-20 minutes.
Grease banana leaves with oil or ghee. Heat a pan, place a greased leaf on it, pour batter, and spread thinly.
Cover with another leaf and cook for 2-3 minutes on each side. Once golden, peel the leaves and serve.
