Andhra Murukku, also known as Chegodilu, is a crispy and savoury rice flour snack traditionally enjoyed during festivals. This crunchy ring-shaped treat pairs perfectly with hot tea or coffee, making it a delightful evening snack.
1½ cups rice flour 1½ cups water 1 tsp urad dal flour 2 tbsp butter 2 tbsp moong dal 1 tsp cumin seeds 1 tsp sesame seeds 1 tsp red chilli powder ¼ tsp asafoetida 1 tsp salt 3 cups oil (for deep frying)
Soak the moong dal in water for at least 15 minutes. Heat water in a pan, adding salt, soaked moong dal, and butter.
Once the water boils, gradually add the rice flour while stirring continuously.
Switch off the heat, let the dough cool, then knead in cumin, sesame, chilli powder, and asafoetida.
Form small dough balls, roll them into strips, and shape them into rings.
Deep fry the rings in hot oil until golden brown and crispy.
