Achari Baingan is a unique fusion spicy curry made with pickle masala, sliced eggplant, and potatoes. It pairs perfectly with Indian flatbreads like poori and bhatura, or even with rice.
2 tbsp. oil 2 brinjals, chopped 2 potatoes, chopped 2 tbsp. oil 1 bay leaf 1 tsp. cumin 1 cinnamon 2 cardamom pods A pinch of hing
1 chopped onion 1 tsp. ginger-garlic paste ½ tsp turmeric 1 tsp. chilli powder ½ tsp garam masala ½ tsp salt 2 chopped tomatoes 1 cup of water 2 tbsp. chopped coriander 1 tsp kauri methi, crushed
Heat oil in a large kadai and add chopped brinjals; sauté until soft and browned.
Roast chopped potatoes until golden brown and crisp; set aside.
Add oil, bay leaf, cumin, cinnamon, cardamom pods, and a pinch of hing; sauté until aromatic.
Add a finely chopped onion and ginger garlic paste. Sauté until golden brown.
Add turmeric, chilli powder, garam masala, and salt and sauté
Add 2 chopped tomatoes and cook until soft; then add fried brinjal and potatoes, mixing gently.
Add 1 cup water, cover, and simmer for 10 minutes; add 2 tbsp chopped coriander and 1 tsp kauri methi, then mix well.
