Kachri ki chutney is an easy, quick, and tangy chutney made from kachri (wild cucumber). It's a spicy Rajasthani delight that complements roti or rice, adding a burst of flavour to your meal.
1 bowl large clove of garlic, peeled 1 onion, chopped 2-3 kachri, peeled 1 tsp salt 4-5 wet red chillies 1/2 tsp cumin 1/4 tsp asafoetida 2-3 tbsp oil for seasoning
Remove the peel of the kachri and cut it.
Add chopped kachri, onion, garlic, red chillies, and salt to a mixer jar and grind well.
Heat oil in a pan for seasoning. Add cumin seeds and asafoetida, then add the ground chutney.
Cook the chutney for 2 to 3 minutes, adjusting salt and chillies to taste.
Enjoy the spicy kachri chutney with your meal.
