How To Make South Indian Style Tomato Rice

A quick and delicious rice dish is one that is great for a quick and easy meal. Looking for a unique one? This south Indian style tomato rice recipe is perfect. 

Ingredients

1 cup basmati rice  (washed and drained) 2 medium onion 2 tsp sambhar powder Handful of coriander leaves 2 tbsp refined oil 1 tsp garlic paste 5 large tomatoes (blended) 2 medium green chillies ½ tsp turmeric Salt as required

Ingredients

1 tsp ginger paste 2 pinches of red chilli  powder ¼ cup grated coconut For tempering: ½ tsp mustard seeds 5-7 curry leaves A pinch of asafoetida 2 whole red chillies ½ tbsp ghee 

Soak the rice for an hour, post that cook it in a pan with hot water until it becomes soft but not mushy. Drain the water and allow the rice to dry up. 

Now heat oil in a pan, add green chillies and onions, saute till turn the onions turn golden. 

Add ginger and garlic paste followed by grated coconut. Stir well, and then add the rice followed by remaining spices and herbs. Mix well. 

Pour the tomato puree, and cook the masala followed by salt, pepper and red chilli powder. 

For the tempering, add all the spices in ghee and let them splutter. Pour this over rice and mix well.
