A beloved South Indian delicacy, set dosa is a breakfast staple across the region. It is soft, spongy, and slightly tangy in flavour, making it the favourite of dosa lovers. From crispy to paper-thin dosa, set dosa stands out for its unique characteristics and simple preparation method. This is how you can make a set dosa at home:
2 cups of idli rice 1 cup of urad dal (black gram lentils) ½ cup of flattened rice (poha) ½ cup of cooked rice Salt to taste Oil or ghee for cooking
Grind the soaked idli rice and urad dal. And grind them separately to a smooth batter using minimal water. Combine both the batters in a large bowl.
Grind flattened rice along with cooked rice to a fine paste and add it to the bowl with the rice and dal batter. Mix well.
Add salt to taste and allow the batter to ferment for 8-10 hours or overnight in a warm place. Once fermented, the batter will rise and become airy. Stir it gently.
Heat a tawa and grease it with oil or ghee. Pour a ladleful of batter on the tawa and grease it gently into a thick disc. Cover and cook for a few minutes until it turns golden brown. Flip the dosa and cook the other side.
Serve hot with coconut chutney and sambar.
